Where can I find authenic German Bratwurst in Louisiana???

What I am looking for is information on a butcher shop somewhere within 200 miles of central Louisiana that does not have an internet presence, but makes real German sausage.
I have found many that make Cajun sausages but I am unable to find any supplier of authenic German foods closer than New Orleans or Houston. This is ironic when you consider that Cajun sausage makers originally learned their craft from German immigrants

I Know:
1– About the festival in Roberts Cove – it’s great, I go every year. They ship their sausage in from West Texas, but there is no store in the town that sells German foods throughout the year. BTW; New Orleans has a better Oktoberfest
2– How to Google. There are hundreds of sites selling German Foods. Most of the better Bratwurst sites seem to be in Wisconsin – I’m in the backwoods of Louisiana – the shipping charges are greater than the cost of the sausage.
$75 for six pounds of sausage is too much for me.

I would suggest that you make your own brats. It’s easy enough because the butcher can grind the meat and fat for you. Be sure to ask the butcher to grind the meat and fat to a medium or to a chili grind. That’s important because you want that size of a grind so that your sausage will be authentic. look on the Internet for the proper spices and you can buy casings from the butcher as well. If you can’t find that stuff at home go to www.cabellas.com they are a sporting goods company that carries kits to make sausages. Bratwurst being one of them. They sell the spices along with the casings for about $15.00 dollars and that’s enough stuff to make about 25 pounds of sausage. Don’t be scared to try to make sausage… it’s really easy to do. You won’t need a lot of expensive equipment to get started. You can get what you need from Cabellas. Remember to just have fun with it! And you can always eat your mistakes!! give it a try. hope this helps, chef Paul
